Homemade broth can be lower in sodium and fresher.
Chop the bottom off a leek, cut off the green parts, slice it halfway through, and rinse through the layers to clean it.
Thinly slice the leek and chop one carrot into smaller circles, cutting the thicker parts into half moons.
Slice one stock of celery, keeping the skinnier parts as is and dicing the thicker parts.
Chop about a tablespoon of parsley for later use.
Heat 2 teaspoons of vegetable oil in a pot until screaming hot.
Sear the skin side of an 8 to 12 oz bone-in split chicken breast for about 6 minutes until golden and crispy, without cooking the underside.
Remove the chicken and add the chopped vegetables (except garlic and parsley) to the pot, sprinkle with salt and pepper, and let sweat for about 5 minutes until softened.
Add minced garlic and cook for about 30 seconds, being careful not to burn it.
Add 1 tablespoon of flour and cook for about 1 minute to eliminate the raw flour taste.
Switch to a whisk and add 3 cups of chicken broth, scraping the bottom of the pot to incorporate any bits stuck there.
Add a dried bay leaf and return the chicken to the pot, placing it flesh side down.
Bring the mixture to a high rolling simmer, then cover and reduce to a low simmer for about 20 to 22 minutes until the chicken is cooked through.
Boil rotini pasta separately to prevent it from absorbing too much broth if not eaten all at once.
Remove the bay leaf and shred the chicken, discarding the skin and bones.
Add the shredded chicken back to the pot to warm it up, then stir in chopped parsley, reserving some for garnish.
Taste for seasoning and adjust with salt and pepper if necessary.
Ladle the cooked rotini into bowls and pour the hot broth over it before serving.
