Fry big chunks of panchetta in a pan without adding oil to render out the fat.

Add asparagus to the pan with the frying panchetta and season generously with black pepper.
Cook spaghetti in boiling water for about 1.5 minutes until al dente.
Remove the pasta and reserve some cooking water before adding the spaghetti to the pan with the panchetta and asparagus.
Allow the pan to cool slightly before adding the egg mixture to prevent scrambling.
Mix in the egg and cheese mixture, using reserved pasta water to achieve a creamy consistency.
Finish with a squeeze of lemon juice and additional Parmesan cheese.
