2 lb ribeye steaks
3 jalapenos
8 oz cream cheese
1 cup cheddar cheese
2 teaspoons garlic
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons olive oil
1/4 cup fresh cilantro
2 tablespoons lime juice
1 teaspoon smoked paprika
1 teaspoon cumin
4 slices bacon
toothpicks

Cut ribeye steaks from the center of the fillet, 40 mm thick.

Using a meat mallet, tap the steaks down until they are about 20 mm thick.

Air dry the steaks overnight in the refrigerator.

Using a slicing or carving knife, butterfly the fillets.

De-seed the jalapenos and cut them into thin strips.

Chop the onion finely.

Fry the onion, half of the jalapenos, cumin, and garlic powder for 3 to 5 minutes until very soft and the mixture has taken on some color.

Remove the pan from the heat and stir in the cheese until it is melted into the mixture.
