Jalapeno Cheese Stuffed Ribeye Steaks

Cut ribeye steaks from the center of the fillet, 40 mm thick.
Using a meat mallet, tap the steaks down until they are about 20 mm thick.
Air dry the steaks overnight in the refrigerator.
Using a slicing or carving knife, butterfly the fillets.
De-seed the jalapenos and cut them into thin strips.
Chop the onion finely.
Fry the onion, half of the jalapenos, cumin, and garlic powder for 3 to 5 minutes until very soft and the mixture has taken on some color.
Remove the pan from the heat and stir in the cheese until it is melted into the mixture.
Grease a heavy roasting pan or an ovenproof frying pan.
Place the steaks in the pan, brush the tops with oil, and fill them with the jalapeno cheese mixture.
Broil the steaks on the top shelf for 6 to 8 minutes without needing to turn them.
Fry the other half of the jalapenos in a little oil for 3 minutes.
Add the sour cream and stir until it starts to melt in.
Add the sugar and stir into the cream until it has dissolved.
Season the sauce with salt and pepper to taste and remove it from the heat but keep it warm.
When the steaks have completed grilling, transfer them to platters and allow them to rest for 5 minutes.
Top the steaks with the sauce and serve with accompaniments of your choice.
