Cut up the zucchini (about 6 or 7 zucchinis).

Dice 1 onion.

Heat vegetable oil in a skillet over high heat.

Add diced onion to the skillet and cook until golden brown.

Add the zucchini to the skillet with the onion and reduce heat to medium.

Cover the skillet with a lid and let the zucchini cook until softened and colored.

Crack the eggs into a bowl and season with salt and black pepper.
