Slice 800 g of chicken breast in half and butterfly it, then slice into two even-sized fillets.
Cut the fillets into strips.
Place the chicken strips into a mixing bowl.
Add 1 and 1/2 teaspoons each of onion powder, garlic powder, and smoked paprika, along with a pinch of salt and 20 cracks of black pepper.
Mix the chicken with the seasonings using clean hands until fully coated.
In another bowl, add 100 g of corn flakes and crush them to a coarse texture.
Mix in 60 g of grated Parmesan cheese with the crushed corn flakes.
In a third bowl, crack in 2 whole eggs and add 60 ml of milk, then whisk until combined.
Remove the core from 300 g of green cabbage and thinly slice it (chiffonade).
Slice 1 large carrot into thin strips (julienne).
In a bowl, combine 1 cup of Greek yogurt, 60 g of Dijon mustard, 80 g of honey, 20 ml of apple cider vinegar, a small pinch of salt, and 10 cracks of black pepper. Mix well to create the honey mustard dressing.
Coat the chicken strips in the egg wash, wiping off excess, then coat in the corn flake mixture and place on a tray.
Heat 60 ml of olive oil in a pan to about 180°C (350°F).
Cook the chicken in batches, about 2 to 2 and 1/2 minutes on each side until golden brown.
Remove the chicken and place on a wire rack or paper towel to drain excess oil.
Continue cooking remaining batches of chicken, ensuring oil temperature is maintained.
Once all chicken is cooked, optionally sprinkle with sea salt flakes before assembling the wraps.
