- 7Drain excess oil from the skillet, leaving a thin layer to coat the bottom.
- 8Spread the cooked potatoes and onions evenly in the skillet.
- 9Pour the egg mixture over the potatoes and onions, ensuring even coverage.
- 10Cook on medium-low heat until the edges start to set, about 5-7 minutes.
- 11Carefully flip the tortilla using a plate, cooking the other side until set and golden, about another 5-7 minutes.
- 12Slide the tortilla onto a serving plate and let it cool slightly.
- 13Garnish with chopped parsley before serving.
