Instructions

  1. 1In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  2. 2Heat the olive oil in a non-stick skillet over medium heat.
  3. 3Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set but still slightly runny.
  4. 4Add the crumbled feta cheese to the eggs and stir gently to combine.
  5. 5Warm the tortillas in a separate skillet or microwave until pliable.
  6. 6Divide the egg and feta mixture evenly between the two tortillas.
  7. 7Fold the tortillas in half to enclose the filling.
  8. 8If desired, sprinkle with chopped parsley before serving.
  9. 9Serve warm, optionally with a side of salsa or hot sauce.

  • 1 medium head of cabbage, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 8 small tortillas (corn or flour)
  • 2 tbsp olive oil

Instructions

  1. 1In a large skillet, heat olive oil over medium heat.
  2. 2Add the chopped cabbage to the skillet and sauté until softened, about 5-7 minutes.
  3. 3In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. 4Once the cabbage is cooked, reduce the heat to low and pour the egg mixture over the cabbage, stirring gently to combine.
  5. 5Sprinkle the shredded cheese evenly over the top of the cabbage and egg mixture.
  6. 6Cover the skillet and let it cook for about 5 minutes, or until the cheese is melted and the eggs are set.
  7. 7While the mixture is cooking, warm the tortillas in a separate pan or microwave.
  8. 8Once the cheese is melted, remove the skillet from heat and let it cool slightly.
  9. 9Spoon the cabbage and cheese mixture onto each tortilla, fold, and serve warm.
