Open 2 bags of frozen riced cauliflower and place them on a prepared pan lined with oil.
Bake the cauliflower at 400°F for about 15 minutes to dry it out.
Prepare a large strainer with a paper towel inside and place the baked cauliflower in it.
Press down with another paper towel to remove excess moisture, especially if using fresh cauliflower.
In a bowl, combine the drained cauliflower with cream cheese, mozzarella cheese, 1 egg, garlic powder, onion powder, Himalayan salt, and a mixture of herbs and spices.
Mix until well combined.
Spread a little olive oil on parchment paper on a pizza pan.
Divide the cauliflower mixture into two batches, each forming a 10 to 12-inch pizza crust about 1/4 inch thick.
Bake the crust at 400°F for 10-15 minutes until golden brown.
Flip the crust using another piece of parchment paper and bake for another 10 minutes until the other side is golden brown and dried out.
Top the crust with tomato sauce, pepperonis, green peppers, red onions, jalapeno peppers, and cheese, being careful not to overload it.
Bake again at 400°F until the cheese melts.
Slice and serve the pizza.
