Place butter and sugar in a food processor and blend until smooth.
Add egg yolk, low FODMAP flour, xanthan gum, and salt to the food processor and pulse until it forms a smooth ball.
Press the dough into the prepared pan.
Bake for approximately 20 minutes.
While the crust is baking, prepare the caramel by placing sugar in a saucepan over medium-low heat, stirring gently until it forms a liquid.
Once melted, remove from heat and stir in butter, heavy cream, salt, and vanilla.
Pour the caramel over the cooled crust.
Place the pan in the refrigerator to chill well.
Once cool, slice the bars into 16 or more pieces.
Melt chocolate and coconut oil in the microwave or a double boiler until smooth.
Gently dip the bars in the chocolate using two forks.
Place dipped bars on a prepared baking sheet and sprinkle with sea salt if desired.
Allow to cool before enjoying.
