Chop the cucumber and add it to a bowl.
Chop the tomatoes, discarding the seeds, and add them to the bowl.
Chop red bell pepper, green capsicum, and yellow bell pepper, adding them to the bowl as well.
Combine all the chopped vegetables with the cooled corn in the bowl.
Add fresh mint leaves and lemon juice to the bowl.
Season with salt and black pepper just before serving and mix well.
