Baked Lemon Herb Chicken

4 boneless, skinless chicken thighs
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon paprika
1/4 cup fresh parsley (chopped)
1 teaspoon dried rosemary
2 lemons (juiced and zested)
1/4 cup olive oil
2 tablespoons butter
3 cloves grated garlic
1/4 cup lemon juice
1 tablespoon honey
1 cup cooked rice
1 cup carrots (sliced)
1 teaspoon Italian seasoning
1 teaspoon salt

Marinate the chicken thighs in a bowl.

Add olive oil over the chicken thighs.

Sprinkle onion powder, garlic powder, chili powder, paprika, parsley, and rosemary onto the chicken.

Zest the lemon and add the zest to the chicken.

Stir everything together until the chicken is well seasoned.

Cover the bowl with plastic wrap and let it marinate for at least 30 minutes (or up to overnight for extra flavor).

After 1 hour, preheat the oven to 350°F.

Place the marinated chicken thighs in a cast iron skillet (or a baking sheet).
