Prepare the roux by mixing 1 1/2 tablespoons of bread flour with 3 tablespoons of water and 3 tablespoons of whole milk.
In a separate bowl, combine 1/2 cup of plant-based milk at 95°F (30°C) with 1 tablespoon of instant yeast and let it activate.
In a large mixing bowl, combine 2.5 cups of bread flour, 1 teaspoon of fine sea salt, and 3 tablespoons of granulated sugar.
Add the activated yeast mixture and the roux to the dry ingredients.
Mix in 3 tablespoons of softened unsalted plant-based butter until a dough forms.
Knead the dough until smooth and elastic, then let it rise until doubled in size.
Shape the dough into buns and place them on a baking tray.
Let the buns rise again before baking them in the oven.
