Mix warm water and sugar in a bowl; let sit until foamy, about 5-10 minutes.
Combine flour and salt in a large mixing bowl.
Add the yeast mixture, oil, and spinach to the flour; mix until a dough forms.
Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
Place the dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour.
Preheat the oven to 375°F (190°C).
Punch down the risen dough and divide it into equal portions.
Shape each portion into a round bun and place on a baking sheet lined with parchment paper.
Cover the buns with a cloth and let rise for another 30 minutes.
Bake in the preheated oven for 15-20 minutes until golden brown.
Remove from the oven and let cool on a wire rack before serving.
