1 lb diced ham
1 ham bone

Rinse split peas under cold water until clear.

In a Dutch oven over medium heat, melt butter and olive oil together.

Add diced white onion, diced celery, and shredded carrots; stir and cook until softened, about 5 minutes.

Add salt, minced garlic, and the rinsed split peas; stir to combine.

Add the ham bone, chicken broth, diced ham, and enough water to fill the pot about an inch and a half from the top.

Bring the mixture to a boil.

Once boiling, reduce heat to low and cover the pot; cook for 2.5 hours, stirring every half hour and scraping the bottom of the pot.

Every hour, turn the ham bone and skim the fat off the top of the soup.

After 2.5 hours, remove the ham bone and let it cool on a cutting board.

Once cool enough to handle, cut the meat off the bone and dice it into cubes.

Add the diced ham back into the soup, stir, and adjust seasoning with salt and pepper to taste.
