Soak 500g of rice overnight, then wash and cook in water until mushy.

Chop 750g of onions into half rings.

Melt 50g of butter with 50ml of Greek olive oil in a pan over medium-high heat.

Add the chopped onions to the pan and sauté for about 5 to 7 minutes with the lid on.

Crush a whole head of garlic and add it to the onions, cooking for a couple of minutes until aromatic.

Add 1 large spoon of salt, 1 small spoon of black pepper, 0.5 small spoon of coriander seeds, and 1 small spoon of dried mint to the onion mixture and sauté for a couple of minutes on medium-low heat.

Take some liquid from the cooked rice and cool it down in a container.

In a bowl, mix a couple of spoonfuls of the yogurt with 2 egg yolks and the cooled rice liquid until creamy.

Combine the creamy yogurt mixture with the sautéed onions and spices, stirring constantly on medium-low heat for 5 to 10 minutes without bringing it to a boil.
