Cut a piece of parchment paper to line the bottom of a 9-inch springform pan and trim any excess.
Crush about 1.5 packages of graham crackers in a food processor until very grainy, about 1.5 cups.
Transfer the crushed graham crackers into the springform pan and pour 6 tablespoons of melted butter over the top.
Mix the graham cracker crumbs and butter together and spread evenly to form the crust.
Bake the crust in a preheated oven at 350°F for 8-10 minutes.
In a standing mixer, beat 36 ounces of cream cheese at a number two setting for 5 minutes until fluffy, scraping down the sides of the bowl.
Add 6 large eggs one at a time, mixing well and scraping down the sides after each addition.
Add 1/3 cup sour cream, 1 tablespoon vanilla extract, and 1 cup sugar to the cream cheese mixture, mixing until silky smooth with no lumps.
Wrap the springform pan in heavy duty aluminum foil to prevent water from entering during baking.
Place the wrapped springform pan in a large roasting pan and fill it halfway with hot tap water.
Bake the cheesecake in a preheated oven at 450°F for 15 minutes, then decrease the temperature to 225°F and bake for 1 hour.
Let the cheesecake cool until it can be touched, then refrigerate overnight to set.
To remove the cheesecake, dip a sharp knife in boiling water and run it around the edge of the springform pan.
Cut the cheesecake into 8 equal parts, dipping the knife in boiling water for clean edges.
Decorate each cheesecake piece with various toppings using a piping bag and a 1M tip, including caramel, Lotus, and chocolate toppings, and dust with confectioner's sugar and strawberries.
