Remove the chicken from the skillet, leaving the grease for flavor.
Add sliced peppers and onions to the skillet and cook for about 3 minutes, seasoning with a pinch of salt.
Slice open the hoagie rolls using a serrated knife.
Toast the hoagie rolls in a skillet or air fryer on broil for best results.
Add the cooked chicken back to the skillet with the vegetables and mix well, retaining all the juices.
Taste and adjust seasonings if necessary.
Add about 1 tablespoon of water to the skillet to create steam for melting the cheese.
Add a little mayo to the hoagie rolls before filling them.
Fill the toasted hoagie rolls with the chicken, peppers, and cheese, being generous with the portions.
