Make the cinnamon sugar by mixing white sugar, light brown sugar, and cinnamon together.

Let the sourdough bread dry out for about 30 minutes to help it absorb more moisture.
Add half of the brown sugar butter mixture into a 9-inch by 9-inch baking dish.
Arrange the dried sourdough bread slices in the baking dish, filling all gaps.
Pour about half a cup of the egg and custard mixture over the bread slices.
Sprinkle some cinnamon sugar over the bread layer, adjusting sweetness to taste.
Add another layer of bread in the same manner, followed by the remaining custard mixture.
Top with the rest of the brown sugar and butter mixture, and sprinkle with more cinnamon sugar.
Preheat the oven to 350°F (175°C).
Bake the casserole uncovered for about 30 minutes, keeping an eye on it to prevent over-browning.
While baking, prepare the crumble by mixing gluten-free flour with cinnamon sugar and cold butter until it resembles pea-sized granules.
After 30 minutes, cover the casserole for the last 5 minutes of baking.
Top the casserole with the crumble mixture and bake uncovered for an additional 15 to 25 minutes until it darkens in color.
Let the casserole cool slightly before slicing and serving.
Dust with powdered sugar and serve with whipped cream if desired.
