180 ml water at room temperature
1/2 teaspoon dry yeast or 12 g fresh yeast
1/2 teaspoon of salt
2 teaspoons of sugar
1 Kg of salted cottage cheese

Put the milk in a large bowl at room temperature, add the water at room temperature, dry yeast, white sugar, and salt and mix well.

If using fresh yeast, liquefy it with sugar and add it over the milk.

Add the sifted flour little by little, mixing until combined.

Knead the dough for about 10 minutes until soft but non-sticky.

Wrap the dough in plastic wrap and let it rest for 10 minutes.

Divide the dough into 8 equal parts and form balls, covering them with plastic wrap to rest for 20 minutes.

Prepare the filling by mixing 2 eggs with the cheese; divide the cheese for two different fillings, adding onion and dill to one half.

Spread each ball into circles 15 cm in diameter and grease each sheet with plenty of oil.

Turn the sheets over, sprinkle with a little oil, and add the desired filling before rolling them up and twisting the ends.

Beat the yolk with a little milk and grease the pies.

Place the pies in a preheated oven at 180°C for about 35 minutes.
