Sausage Egg Casserole

1/2 pound breakfast sausage
1/2 large onion
1 tablespoon dried Italian seasoning
2 cups fresh spinach
6 eggs
1 cup ricotta cheese
1/2 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup grated Parmesan cheese
nutmeg (to taste)
1/2 cup coarsely shredded cheddar cheese

Cook 1/2 pound of breakfast sausage in a pan over medium to medium-high heat until browned.

Preheat the oven to 350°F.

Chop 1/2 of a large onion and add it to the pan with the sausage as it begins to brown.

Add 1 tablespoon of dried Italian seasoning to the sausage and onion mixture.

Coarsely chop 2 cups of fresh spinach and add it to the pan, cooking until everything is browned and delicious.

In a bowl, crack 6 eggs, avoiding shards by cracking them on a flat surface.

Add 1 cup of ricotta cheese and 1/2 cup of heavy cream to the eggs and whisk until smooth.

Mix in 1/2 teaspoon of salt, 1/4 teaspoon of ground black pepper, and 1/4 cup of grated Parmesan cheese.

Grate nutmeg into the mixture to taste and mix well.

Layer the sausage and onion mixture into a lightly greased 9x9 pan.
