Rough chop green bell pepper and onion.

Add 2 to 3 tablespoons of extra virgin olive oil to a large pot over high heat.

Add the rough chopped onion and green bell pepper to the pot and sauté for a few minutes.

Add 2 to 3 tablespoons of minced garlic or garlic paste and sauté for about 1-1.5 minutes.

Add an 8 oz can of tomato sauce and stir to incorporate.

Mix in half a teaspoon of adobo seasoning, 1.5 to 2 packets of saone, 1/4 teaspoon each of cumin and salt, and ground black pepper.

Add 3 cups of water and bring to a boil with the beans.

Once boiling, reduce to a simmer and add the prepared safrito mixture.

After about 20-25 minutes, add potatoes and olives to the pot.

Cover and let cook for another 20-25 minutes until potatoes are soft.

Optionally, add 1 tablespoon to 1.5 tablespoons of sour orange and let cook for 5 more minutes.
