Dump in sugar, butter, and buttermilk into a pot.
Stir the mixture until the butter is melted and it starts to boil.
Add vanilla bean paste to the boiling mixture.
Add baking soda and watch it bubble up due to the reaction with buttermilk.
Set the syrup aside to cool for a minute after it's done.
Take the pan in one hand and the dough in the other.
Put the pan on the induction cooktop and swirl the dough quickly to coat the pan evenly.
Cook the crepe on one side, then flip it after it's cooked on that side.
Cook for about 30 more seconds on the other side.
Assemble the crepes by placing brown sugar butter in the middle and folding it in quarters.
Add sliced bananas or any fruit of your choice on top of the folded crepes.
Drizzle the syrup made earlier over the fruit and crepes.
Garnish with whipped cream, fresh berries, and a sprinkle of cinnamon.
