This loaded version combines the beloved flavors of pizza with the soft, airy texture of focaccia. Traditionally enjoyed as a snack or appetizer, it has gained popularity as a main dish, especially in casual gatherings and parties. Today, variations abound, with toppings ranging from classic Italian ingredients to more adventurous combinations, appealing to a global audience.

In a large bowl, add all purpose flour.
Add a little bit of salt to the flour.
Add a little bit of yeast on the opposite side of the bowl from the salt.
Mix the yeast into the flour on one side, then mix them together.
Add room temperature water to the mixture, holding back a bit just in case you don’t need it all.
Mix the ingredients together with a spoon, then use your hands to feel the dough.
If the dough seems dry, add a splash more water to bring it together into a wet ball.
Coat the dough in olive oil and place it in a clean bowl.
Cover the bowl with cling wrap or a reusable shower cap and let it ferment overnight for a minimum of 12 hours, preferably 18-24 hours.
After fermentation, prepare a 9"x13" pan by generously coating it with olive oil.
Add the dough to the pan and push it into the corners, allowing it to spring back a bit.
Cover the pan with a shower cap and let it sit for 15-20 minutes to relax the gluten.
After 20 minutes, stretch the dough to fit the full size of the pan and cover it again.
Let the dough sit for 2-4 hours until it grows and develops bubbles.
After 2 hours, dimple the bread with clean fingers all over the surface.
Prepare the pizza sauce by blending all ingredients together.
Spread a generous amount of pizza sauce over the dimpled dough.
Add shredded mozzarella cheese liberally on top of the sauce.
Add sliced pepperoni on top of the cheese.
Sprinkle Italian seasoning over the toppings.
Bake in a hot oven for 25 minutes until the cheese is melted and bubbly.
Remove from the oven and cut into slices while warm.
