Loaded Pizza Focaccia Bread

Today, variations abound, with toppings ranging from classic Italian ingredients to more adventurous combinations, appealing to a global audience.

Chop 2 yellow onions finely.
Transfer the chopped onions to a pan and sauté with 2 tbsp of butter until caramelized.
De-glaze the pan with a little bit of water if necessary, then set the onions aside for later.
Combine 1 and 1/4 cup of warm water and 2 tsp of instant yeast in a bowl, stir together, and set aside for a few minutes until bubbly.
In a food processor, combine 5 and 1/2 cups of flour, 2 tsp of salt, 1 cup of pizza sauce or marinara sauce, and the bubbly yeast mixture.
Pulse until just combined, then add half of the caramelized onions and pulse for another 30 seconds to fully combine.
Turn out the dough onto a lightly floured surface and gently knead it together for around 1 minute.
Transfer the dough to a lightly oiled bowl and allow it to rise for about 1 hour.
Preheat the oven to 425°F (220°C).
Lightly grease a 9 by 13 baking dish and turn out the risen dough, stretching and flattening it with your fingertips, creating indents as desired.
Add the remaining caramelized onions on top of the dough.
Drizzle 1/2 cup of extra virgin olive oil over the dough.
Spread 1 and 1/4 cup of pizza sauce or marinara sauce on top of the oil.
Sprinkle 2 cups of mozzarella cheese evenly over the sauce.
Add 1/2 cup of pepperoni and a handful of sliced cherry tomatoes on top.
Sprinkle a generous amount of coarse salt, cracked pepper, and Italian seasoning over the toppings.
Transfer the baking dish to the oven and bake for 15 minutes.
Rotate the pan and bake for another 20 minutes or until the kitchen smells like a pizzeria.
Place a tin foil-lined cookie sheet under the focaccia bread in case it bubbles over.
Allow the bread to cool for 15 minutes before serving.
