Traditionally made with meat and béchamel, this five cheese version highlights the rich flavors of various cheeses, making it a favorite for gatherings and celebrations. In modern times, lasagna has been adapted globally, with countless variations to suit local tastes and dietary preferences.

Put water to boil in a large pot, adding salt and a little oil.
Once boiling, add ground turkey to the pot and break it apart as it cooks for about 5 minutes.
Add chopped onions, bell peppers, and crushed garlic to the meat, mixing well.
Lower the flame and add onion powder, garlic powder, paprika, and cover for 5-6 minutes.
Cook lasagna noodles according to package directions, using tongs to separate them while boiling.
Add diced tomatoes to the meat mixture, reserving 1 cup of pasta sauce, and pour the rest into the pot.
Add half a cup of pasta water to the jar of reserved sauce, shake it up, and pour it into the pot.
Mix in dried basil, dried oregano, and fennel seeds, then let it simmer.
Drain the lasagna noodles and rinse them with cold water to cool them down.
Taste the sauce and adjust seasoning if necessary.
In an 11 by 13 inch baking dish, add a little sauce to the bottom.
Layer four lasagna noodles in the dish, then spread about half a cup of meat over them.
Dot ricotta cheese on top of the meat and spread it out.
Sprinkle grated Parmesan cheese, then shredded sharp cheddar, followed by the mozzarella and provolone mix.
Repeat the layering process with another four noodles, meat, ricotta, Parmesan, cheddar, and mozzarella.
For the final layer, add four more lasagna noodles, cutting some into inch and a half pieces to cover the whole dish.
Top with the reserved pasta sauce and sprinkle with Parmesan and the mozzarella and provolone mix.
Cover the dish with aluminum foil and place it on a baking sheet to catch any overflow.
Bake in a preheated oven at 375°F for 45 minutes to an hour, checking as needed.
Let the lasagna cool for 15-20 minutes before slicing.
