Mix the apples with sugar, cinnamon, nutmeg, and vanilla extract.
Roll out the Pate Brisee and place it in a pie dish.
Fill the crust with the apple mixture and dot with butter.
Cover with another layer of pie crust, sealing the edges.
Cut slits in the top crust for steam to escape.
Add decorations made from the extra dough on top of the pie.
Sprinkle sugar on top of the pie crust.
Bake for 45-50 minutes until the crust is golden brown.
Let cool before serving.
