Preheat the oven to 425°F.
Wash the delicata squash, cut it in half, and remove the seeds.
Cut the delicata squash into cubes, leaving the skin on.
Chop cauliflower and brussel sprouts, season with salt and olive oil, and place on a sheet pan.
Roast the vegetables in the preheated oven for 20-30 minutes until soft inside with a nice crust on the outside.
Cube the whole wheat bread, leaving the crust on.
Once the vegetables are roasted, place them in a bowl.
Add the cubed bread and kale to the bowl with the roasted vegetables.
Dress the salad with apple cider vinegar and toss to combine, allowing the bread to absorb the dressing for a few minutes.
Chop and toast walnuts, then add to the salad and give it a good toss.
Taste the salad and adjust seasoning if necessary before serving.
