Add coconut oil into the pot.

Add 1 tablespoon of curry powder to the pot.

Add pieces of onion, garlic, pimento seeds, and a small piece of ginger to the pot.

Sauté the mixture for about 3 minutes.

Add canned beans and sweet corn to the pot and mix with the curry for about 3 minutes.

Add salt to the mixture, without any additional seasoning.

Wash the jasmine rice about four times.

Coat the rice into the curry mixture and fry for about 3 minutes.

Add 1 cup of coconut milk to the rice and mix well.

Add 1.5 cups of water to the pot and mix again, tasting for salt.

Add scallion (cut in two pieces), dried thyme, and scotch bonnet pepper to the pot.

Ensure there is enough liquid to steam the rice.

Lower the flame when the liquid almost dries out to allow the rice to steam properly for about 15 minutes.
