Filet Mignon Platter

2 filet mignon steaks (6 oz each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh rosemary, chopped
1 tablespoon garlic, minced
1 cup asparagus, trimmed
1 cup baby potatoes, halved
1 tablespoon butter
1/4 cup red wine (optional)

Preheat the oven to 400°F (200°C).

Season the filet mignon steaks with salt, black pepper, and chopped rosemary on both sides.

In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the steaks for 3-4 minutes on each side until browned.

Remove the steaks from the skillet and set aside.

In the same skillet, add the asparagus and baby potatoes. Sauté for 5 minutes until they start to soften.

Add the minced garlic and butter to the skillet, stirring to combine.

Return the steaks to the skillet, placing them on top of the vegetables.

If using, pour in the red wine and transfer the skillet to the preheated oven.

Roast in the oven for 10-15 minutes for medium-rare, or until desired doneness is reached.

Remove from the oven and let the steaks rest for 5 minutes before serving.

Serve the filet mignon on a platter with the sautéed asparagus and potatoes.
