Garlic Parmesan Potato Wedges

6 potatoes (russet recommended)
2/3 cup freshly grated parmesan cheese
2 teaspoons onion powder
2 tablespoons fresh chopped parsley
1/2 teaspoon red chili flakes (optional)
2 teaspoons garlic powder
1/4 cup olive oil
1/2 teaspoon pepper
2 teaspoons salt
2 teaspoons paprika

Prepare the olive oil mixture by adding 1/4 cup of olive oil to a dish.

Add 2 teaspoons of onion powder, 2 teaspoons of garlic powder, 1/2 teaspoon of pepper, 2 teaspoons of salt, 2 teaspoons of paprika, and 1/2 teaspoon of red chili flakes to the olive oil and mix well.

Cut the potatoes in half lengthwise, then cut each half into wedges of desired size.

Place the potato wedges into a bowl after cutting them all.

Pour the olive oil mixture over the potato wedges, saving some for later, and mix to coat the wedges evenly.

Line a baking sheet with parchment paper and arrange the potato wedges in a single layer on the sheet.

Sprinkle a little more salt over the wedges if desired.

Sprinkle half of the grated parmesan cheese over the wedges evenly.

Preheat the oven to 400 degrees Fahrenheit and bake the wedges for 35 minutes, flipping them halfway through at around the 15 to 17 minute mark.

After 17 minutes, flip the wedges to ensure even cooking and return them to the oven for the remaining 17 to 18 minutes until tender.

Once out of the oven, sprinkle the remaining parmesan cheese over the hot wedges to melt slightly.

Garnish with fresh chopped parsley before serving.
