Preheat the oven: Set your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Prepare the potatoes: Wash the potatoes thoroughly and cut them into wedges. To do this, cut each potato in half lengthwise, then cut each half into 3–4 wedges depending on the size.
Season the wedges: In a large mixing bowl, combine olive oil, minced garlic, onion powder, smoked paprika, Italian seasoning, salt, and pepper. Toss the potato wedges in the mixture until well-coated.
Add Parmesan: Sprinkle half of the Parmesan cheese over the wedges and toss again.
Arrange on baking sheet: Place the potato wedges in a single layer on the prepared baking sheet, skin-side down.
Bake: Bake for 35–40 minutes, flipping halfway through, until the wedges are golden brown and crispy.
Finish with Parmesan: Remove the wedges from the oven and immediately sprinkle the remaining Parmesan cheese over them.
Garnish and serve: Garnish with fresh parsley if desired, and serve warm with your favorite dipping sauce.
