5 lb bag of russet potatoes

Wash the russet potatoes thoroughly.

Cook the potatoes in the microwave until tender, or alternatively, in the oven, avoiding boiling them in water.

Peel the cooked potatoes and place them in a baking dish (9x13 or 11x12 or 14).

Use a potato masher to mash the potatoes into bite-sized soft chunks, not too creamy.

Add 1 to 2 teaspoons of garlic salt, garlic powder, and onion powder to the mashed potatoes and mix well.

Chop up a small sweet onion and add it to the mixture, adjusting the amount based on preference.

Add approximately 3/4 cup of cojack cheese to the mixture and stir.

Scoop in three good scoops of sour cream and mix everything together until well combined, adjusting seasoning with more garlic salt if necessary.
