In a skillet, add 1 pound of ground beef and break it up while frying.
Add 1 small chopped onion to the skillet and continue to cook until the beef is no longer pink.
Stir in diced celery and sliced carrots, cooking together until the meat is browned.
During the last couple of minutes of cooking, add 2 to 3 cloves of minced garlic and mix everything together.
Transfer the cooked ingredients to a large soup pot.
In the pot, add cubed potatoes, 1 small can of green peas, 1 small can of corn, and 1 small can of green beans.
Add 1 large can of tomatoes with juice, 8 ounce can of tomato sauce, and 4 cups of beef broth or beef stock.
Season with salt, pepper, and parsley flakes, then stir everything together.
Heat the mixture on medium-high until it comes to a boil.
Once boiling, turn the burner down to medium-low and cover the pot with a lid, allowing some steam to escape.
Let the soup simmer for about an hour and a half, stirring several times throughout the process.
After an hour and a half, remove the lid and allow the soup to cook down for another 30 minutes to thicken up.
