Flakey Sea Salt

Cultural Context

Flakey sea salt, known as Fleur de Sel in France, is a delicate seasoning harvested from the surface of salt ponds. Traditionally, it has been hand-harvested by salt workers, known as 'sauniers', who skillfully collect the salt flakes during specific weather conditions. This artisanal salt is prized for its light, flaky texture and subtle flavor, making it a favorite finishing salt for chefs and home cooks alike. Today, variations of flakey sea salt are produced worldwide, but Fleur de Sel remains a symbol of French culinary tradition.

1

Collect sea water from a clean and unpolluted source.

2

Filter the sea water to remove any sand particles.

3

Reduce the salt water to about 1/6 of its original weight (e.g., 6 liters down to 1 liter).

4

Put the concentrated sea water mixture in a low oven or dehydrator at around 80C for about 8 hours or overnight, until salt crystals start to form.

5

Gently remove the large pieces of salt crystals from the remaining water.

6

Put the salt back in the low oven or dehydrator for a further couple of hours to fully dry off the salt.

Store the salt in a sealed container.
