1 cup lentils (red or yellow)
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 tsp turmeric powder
1 tsp cumin seeds
1/2 tsp black pepper
Salt to taste
2 tbsp olive oil
1/4 cup fresh cilantro, chopped
1 lemon, juiced

Rinse the lentils under cold water until the water runs clear.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

Add the minced garlic, turmeric, cumin seeds, and black pepper. Sauté for another minute until fragrant.

Pour in the water and bring to a boil.

Add the rinsed lentils and salt to the pot. Reduce the heat to low and simmer for about 20-25 minutes, or until the lentils are soft.

Stir occasionally and add more water if necessary to achieve desired consistency.

Once cooked, remove from heat and stir in the lemon juice and chopped cilantro.

Taste and adjust seasoning if needed.

Serve hot, garnished with additional cilantro if desired.
