2 tablespoons olive oil divided

Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.

Season the chicken cutlets with salt and pepper.

Prepare your station by beating the eggs in a shallow plate. In a second plate, add the flour. In a third one, mix the breadcrumbs with the seasonings.

Add one chicken cutlet to the flour and lightly coat on both sides. Dip into the beaten eggs, allowing the excess to drip off, then transfer into the breadcrumbs mixture. Gently press to adhere the breadcrumb mixture on both sides.

Repeat with all of the chicken cutlets.

Heat 1 tablespoon of oil in a large non-stick pan over medium heat.

Add two breaded cutlets making sure you don't overcrowd the pan. Cook for around 2 minutes per side, or just until it starts to get golden brown. Transfer to your prepared sheet pan.
