Ingredients

  • 2 lbs chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. 1In a bowl, mix together soy sauce, brown sugar, rice vinegar, water, garlic, ginger, and black pepper to create the marinade.
  2. 2Place the chicken thighs in a large resealable bag or a shallow dish and pour the marinade over the chicken.
  3. 3Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for better flavor.
  4. 4Preheat your oven to 375°F (190°C).
  5. 5Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later.
  6. 6Bake the chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. 7While the chicken is baking, pour the reserved marinade into a small saucepan and bring it to a boil over medium heat. Reduce the heat and let it simmer for about 5-10 minutes until slightly thickened.
  8. 8Once the chicken is done, remove it from the oven and brush it with the thickened marinade.
  9. 9Garnish with chopped green onions before serving.
  10. 10Serve the shoyu chicken with rice or steamed vegetables.
