Slice two large sweet onions ultra thin.
Melt 5 tablespoons of Kerrygold butter in a 13-inch cast aluminum grill pan over medium-high heat.
Add the sliced onions to the pan with a pinch of kosher salt and a dash of cracked black pepper.
Sauté the onions until they caramelize to a deep golden brown color, tossing frequently.
In a mixing bowl, combine 2 lbs of 80/20 ground chuck with kosher salt and cracked black pepper, mixing well with your hands.
Form the ground beef into four large patties.
Grill the patties in the dry griddle, working with two at a time to avoid overcrowding.
Cook the burgers to an internal temperature of 145°F for medium, flipping until a nice crust forms.
Remove the patties and let them rest.
In a medium-sized mixing bowl, prepare the Thousand Island dressing by combining 1 cup of Duke's mayonnaise, 2 tablespoons of Heinz tomato ketchup, 2 tablespoons of sweet pickle relish, 1 tablespoon of white vinegar, 6 dashes of unsmoked paprika, 4-5 cranks of cracked black pepper, and 2 healthy pinches of kosher salt. Whisk thoroughly and refrigerate until use.
Butter one side of two slices of marble rye with Kerrygold butter.
In the skillet, place one slice of bread butter side down, add two slices of Swiss cheese, the burger patty, several scoops of Thousand Island dressing, and 1/4 of the griddled onions, then add two more slices of Swiss cheese and the top slice of bread butter side up.
Cover the skillet and keep on low heat until the cheese starts to melt and the bottom side of the bread toasts.
Carefully flip the sandwich over and repeat the process on the other side.
