Preheat griddle to medium-high.

Melt 1 tablespoon butter on griddle. Add onions, toss to coat with the butter, season with 1/2 teaspoon garlic salt and 1/2 teaspoon black pepper and cook until caramelized.

Combine ground chuck with 2 teaspoons garlic salt and 1 teaspoon black pepper. Shape into 2 patties. Melt 2 tablespoons of butter on griddle and cook the patties in the melted butter until well caramelized. When the patties are flipped, top with caramelized onion and 2 slices of cheese each, cover with a metal bowl and cook until the cheese is melted and the burger is cooked through, about 8 minutes total.

While the patties are cooking, toast one side of the bread in 1 tablespoon melted butter. Spread Thousand Island dressing on the untoasted side of the bread and top with patty.
