Prepare 80/20 ground beef into equal portions of 5-6 ounces each.
Gather Swiss cheese, Havarti cheese, sweet onion, sourdough bread, and burger sauce ingredients.
In a mixing bowl, combine 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 2 tablespoons sweet relish, 1 teaspoon Worcestershire sauce, and 1/4 cup ketchup.
Add smoked paprika and all-purpose seasoning to the sauce, mixing well with a whisk.
Dice chives finely and mix into the sauce, tasting and adjusting flavors as needed, then set aside.
Slice one sweet onion thinly, ensuring they will caramelize well.
Heat a skillet over medium heat, adding 1 tablespoon of butter and some avocado oil.
Add the sliced onions to the skillet, tossing them in the butter, and let them cook down for about 15 minutes, stirring occasionally and seasoning with all-purpose seasoning or salt and pepper.
Add a few dashes of Worcestershire sauce to the onions to enhance flavor and help with caramelization.
Toast sourdough bread in the same skillet with more butter, flipping to achieve a golden brown on both sides, then remove from skillet.
Form burger patties from the ground beef, seasoning them with all-purpose seasoning on a plate.
Heat a cast iron skillet over medium-high heat, adding 1 tablespoon of butter.
Cook each burger patty one at a time, smashing them down flat to fit the sourdough bread, and let them cook without touching for a few minutes until a crust forms.
Season the patties with salt, pepper, and optional spices like onion powder or garlic powder before flipping them once the crust has developed.
Add Havarti cheese to one patty and Swiss cheese to the other, allowing them to melt as the burgers finish cooking.
Remove the cooked patties and repeat the cooking process for the second patty.
Assemble the patty melt by spreading the prepared sauce on both sides of the toasted sourdough bread, adding the first burger patty, followed by the second patty, caramelized onions, and additional cheese.
