1 medium daikon radish
1 tsp salt
1 tbsp sugar
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sesame oil

Wash the daikon and cut off the top. Cut the daikon into rough rounds about 10 cm in length, then slice into thin strips approximately 3-5 mm wide.

Spread the sliced daikon on a bamboo strainer or drying basket and sun-dry for 2-3 days of sunny weather until they become dry and slightly amber in color.

Once the daikon is fully dried and amber-colored, store in a ziplock bag with a food desiccant to prevent moisture.
