1 medium daikon radish
1 tsp salt
1 tbsp sugar
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sesame oil
1/4 cup dried bonito flakes (optional)

Peel the daikon radish and cut it into thin strips or julienne.

Sprinkle the salt over the daikon strips and let them sit for about 30 minutes to draw out moisture.

After 30 minutes, rinse the daikon strips under cold water and squeeze out excess moisture.

In a bowl, mix the sugar, soy sauce, mirin, and sesame oil until the sugar is dissolved.

Add the daikon strips to the bowl and mix well to coat them in the sauce.

If using, add the dried bonito flakes and mix gently.

Transfer the mixture to a clean jar or container and press down to remove air pockets.
