1

Hit sauté on your Instant Pot and add in about a half a tablespoon of oil to the inner pot and let that heat.

2

Season 3 lbs of chuck roast with salt and pepper, and cut it into about half-pound pieces to help speed up the cooking process.

3

Sear the roast for about 4 to 5 minutes per side until nice and golden brown.

4

Remove the seared pot roast to a plate and deglaze the pot with about a half cup of beef broth, scraping up the brown bits from the bottom.

5

Cancel the sauté function on the Instant Pot and nestle the seared beef back inside, adding any cooking liquid that may have accumulated on the plate.

6

Combine 2 tablespoons of dried onion flakes, 2 teaspoons of onion powder, 2 teaspoons of garlic powder, 1 teaspoon of kosher salt, 1 teaspoon of dill, 2 teaspoons of dried parsley, 1/2 teaspoon of pepper, 1/4 teaspoon of basil, and 1/4 teaspoon of celery seed to create a homemade seasoning mix.

7

Add the homemade seasoning mix to the pot roast along with 1 and 1/4 cups of low sodium beef stock, 9 to 10 pepperoncini peppers, and 1/4 cup of the juice from the jar of the peppers.

8

Dollop about 4 tablespoons of unsalted butter on top of the mixture.

9

Seal the lid on the Instant Pot, ensuring the venting knob is pointed towards sealed, and cook for 45 minutes on high pressure.

10

Once the cooking time has elapsed, allow pressure to release for at least 10 minutes on its own.

11

Open the Instant Pot and remove the beef to a platter, shredding it easily with two forks.

12

Mix the shredded beef back into the cooking liquid to serve.
