Preheat your oven to 350 degrees Fahrenheit.

Pour 2 tablespoons of vegetable oil into an oven-safe pot over medium high heat.

Once the oil is hot, add the beef chuck roast and sear for 3 to 4 minutes until browned.

Flip the roast over and sear the other side for another 3 to 4 minutes.

Remove the pot from heat and pour in 1/2 cup of beef broth and 1/4 cup of pepperoncini juices.

For electric pressure cooker method: Sear the beef in the instant pot, add the rest of the ingredients, cover, and cook on high pressure for about 60 minutes.

After 60 minutes in the pressure cooker, turn it off and let it have a 15 minute natural release before venting.
