3

Place half of a white onion in the bottom of the crock pot or instant pot, then set the seasoned beef roast on top.

4

Sprinkle the au jus gravy packet and ranch seasoning packet over the beef roast.

5

Rub the seasonings into the meat, ensuring it's well coated on all sides.

6

Add half of the juice from the peppercinis on top of the meat.

7

Add garlic and butter to the crock pot, optionally stab the meat to help flavors penetrate.

8

Add half the jar of peppercinis on top of the meat.

9

Cook in the crock pot for 7 hours, checking at 3 hours and tasting for seasoning.

10

While the roast cooks, rough chop the potatoes and add them to a pot with chicken broth and a tablespoon of chicken bouillon powder.

11

Boil the potatoes for 20 to 25 minutes or until tender.

12

Mash the potatoes while hot, then mix in room temperature cream cheese and butter.

Add 1 tablespoon of garlic powder, 2 ounces of shredded mozzarella cheese, 2 ounces of sharp cheddar cheese, and 1/4 cup of room temperature whole milk to the mashed potatoes and mix well.

14

Season the mashed potatoes with salt, pepper, and garlic powder to taste, then top with green onions and additional cheddar cheese.
