Start with fresh basil leaves, washed and dried.
Add 3 cups of packed basil leaves to the food processor.
Smash 3-4 cloves of garlic before adding them to the processor.
Add the pine nuts to a dry skillet or oven to toast them slightly.
Add the toasted pine nuts to the food processor.
Add freshly grated Parmesan cheese to the processor.
With the processor running, slowly drizzle in extra virgin olive oil until combined.
Add a squeeze of lemon juice to brighten the flavor and pulse to combine.
Transfer the pesto to a jar, and drizzle a thin layer of olive oil on top to preserve it.
