In a blender, add mayonnaise, Dijon mustard, honey, salt, crushed black pepper, smoked paprika, 5 cloves of roasted garlic (or substitute with 1/4 teaspoon granulated garlic), and chili powder. Blend until smooth to create the honey roasted barbecue spread.
Heat peanut oil in a pan for frying the chicken.
After 30 minutes of marinating, remove the chicken from the marinade and coat it in the breading mixture, double breading each piece for extra crispiness.
Check the oil temperature, ensuring it reaches 350 degrees Fahrenheit before frying the chicken.
Fry each chicken piece in the hot oil until the outer layer is crispy and the inner layer is juicy.
Toast the brioche buns on a hot griddle with a drizzle of olive oil for about 30 seconds.
Spread honey roasted barbecue sauce on the toasted brioche buns.
Layer lettuce, fried chicken, pickled cucumber, and tomatoes on the bottom bun.
Sprinkle kosher or sea salt on the tomatoes to enhance their sweetness.
Spread more honey roasted barbecue sauce on the top brioche bun before closing the sandwich.
