Add cod fillets to the skillet, spooning sauce over them.
Cover and cook for 8-10 minutes until cod is opaque and flakes easily with a fork.
In the last 2 minutes, add green peas, bell pepper, and carrots to the sauce.
Remove from heat and stir in lime juice and chopped cilantro.
Serve hot over cooked rice or quinoa.
