Chicken Cacciatore, or 'hunter's chicken', is a rustic Italian dish traditionally made with chicken, tomatoes, and vegetables, often served with pasta or polenta.

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5-7 minutes. Remove chicken and set aside.
  3. 3In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 5 minutes.
  4. 4Add minced garlic and cook for an additional minute until fragrant.
  5. 5Stir in the diced tomatoes, chicken broth, oregano, basil, and red pepper flakes. Bring to a simmer.

  7. 7While the chicken is cooking, bring a separate pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
  8. 8Once the chicken is done, remove it from the skillet and shred it into bite-sized pieces.
  9. 9Add the cooked orzo to the skillet with the sauce and stir to combine. Add the shredded chicken back into the skillet and mix well.
