Brush the sauce onto the pork chops when they reach about 130°F, ensuring to coat both sides.
Open the sear burner on the smoker and let the pork chops bake with the sauce for about two minutes.
Sear the pork chops over direct flame for about one minute on each side, adding more sauce as desired.
Let the pork chops rest for about 15 minutes before slicing into them.
